Stovetop Tzimmes
Description
Stovetop Tzimmes features peeled and cut yams, sweet potatoes, and carrots layered with dried apples and cranberries, all simmered in a mixture of orange juice, honey, brown sugar, cinnamon, and broth. This combination gently cooks for about an hour until the root vegetables are tender and the dried fruits are soft but distinct. The prunes added toward the end warm through without dissolving fully, contributing a subtle sweetness and texture contrast. The dish results in a mildly spiced, sweet side with a softly stewed consistency well suited for holiday meals.
The simmering method allows the flavors to meld gradually, enriching the natural sweetness of the vegetables and fruits. The orange and honey base infuses the ingredients with a delicate citrus aroma balanced by cinnamon and brown sugar notes. This tzimmes is served warm and works well accompanying roasted meats or vegetarian mains during festive dinners.
Ingredients
- 1 1/2 pounds yam 2 potatoes, orange variety, peeled and cut into 1-2 inch pieces
- 1 1/2 pounds sweet potato 2 potatoes, white variety, peeled and cut into 1-2 inch pieces
- 1 pound carrot 8 carrots, peeled and cut into 1-inch rounds
- 6 ounces dried apples (1 1/2 cups)
- 6 ounces dried cranberries (1 1/4 cups)
- 2 cups orange juice
- 1/2 cup honey
- 1/2 cup brown sugar
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 cups chicken broth (you may substitute "no chicken" broth)
- 12 ounces prunes 3 cups, pitted
Instructions
- Place cut yams, sweet potatoes, and carrots on the bottom of a large heavy pot.
- Pour dried apples and cranberries on top.
- In a medium bowl, whisk together orange juice, honey, brown sugar, cinnamon, salt, and black pepper. Pour mixture over the fruits and vegetables in the pot.
- Add chicken broth or "no chicken" broth to the pot, covering the vegetables halfway. Heat pot over medium high until it begins to simmer. Stir the ingredients once gently.Reduce heat to a gentle but constant simmer. Cover the pot.
- After 45 minutes, open the pot and gently stir again. Place pitted prunes on top of the simmering ingredients.
- Cover pot. Continue to cook on lowest heat for another 15 minutes, until potato pieces are tender and prunes have warmed and softened. Don't cook too long, or the prunes will dissolve-- it will make a nice sauce for the tzimmes, but it won't look so pretty on the table.Serve warm as a side dish to a festive holiday meal.
