Description
The muffins start with a batter composed of all-purpose flour, sugar, baking powder, salt, melted butter, eggs, vanilla extract, milk, chopped strawberries, and white chocolate chips. The strawberries are washed, cut into pieces, and incorporated into the batter alongside half the white chocolate chips. The batter is mixed thoroughly, ideally with an electric mixer due to its thickness.
The topping is made separately from flour, brown sugar, white sugar, cinnamon, and melted butter, and sprinkled on top with the remaining white chocolate chips. Muffins are baked until set and lightly golden.
The combination of fresh strawberries and white chocolate lends a balance of tart fruitiness and creamy sweetness. The crumb topping adds texture and cinnamon warmth, enhancing the muffin's flavor complexity. Cooling the muffins on a wire rack before eating helps set the crumb topping and improves texture.
Extra topping crumbs can be stored for future use. These muffins are suitable for breakfast, brunch, or as a sweet snack.
Ingredients
Batter Mixture:
- 2 cups all-purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 tick butter (½ cup) melted
- 2 egg
- 1 teaspoon vanilla extract
- cup & 2 tablespoons milk
- 16 pieces strawberries (13 oz, after cutting it will be 12 oz (2 cups), make sure to have 2 cups of chopped strawberry)
- ¾ cup white chocolate chips (Total of 5 oz, ½ cup (3oz) put into the batter mixture, ¼ cup (2oz) sprinkle on top of the muffin batter before baking.)
Topping Crumbs:
- ½ cup all-purpose flour
- ⅓ cup brown sugar
- ⅓ cup white sugar
- 1 teaspoon cinnamon powder
- ½ tick butter (¼ cup) melted
Instructions
- Soak 16 strawberries (13 oz) for 10 minutes and wash it 2-3 times.
- After that, remove the leaves and cut them into pieces. (The chopped strawberry is around 2 cups, 12 oz.)
- Put 1 stick (½ cup) of butter into the bowl. Then, melt the butter in the microwave for 10-20 seconds. Mix it and make sure it is completely melted because it is easier to mix the flour batter.
- In a mixing bowl, put 2 cups of all purpose flour.
- Then, add 1 cup of regular white sugar, ½ teaspoon of salt and 2 teaspoons of baking powder. Mix it very well.
- The following step, crack 2 large eggs (4 oz) into the flour mixture.
- Add 1 teaspoon of vanilla extract, ½ cup & 2 tablespoons of milk and the melted butter from step 3 into the flour mixture.
- Mix it well and the best is to use an electric mixer because the batter is thick
- Next, add the chopped strawberries from step 2 into the batter mixture.
- Pour ½ cup (3 oz) of white chocolate chips into the batter.
- Fold the fresh strawberries and white chocolate chips into the batter and mix it well.
- For the topping crumbs, put ⅓ cup of brown sugar, ⅓ cup of white sugar, ½ cup of all purpose flour and 1 teaspoon of cinnamon powder into the bowl. Mix it well.
- Then, melt ½ stick (¼ cup) of butter in the microwave for 10-20 seconds. Pour the melted butter into the topping mixture.
- Use the fork to mix the topping crumbs well.
- Place the 16 cupcake liners into the cupcake tray. (You need two cupcake trays because it can make 16-18 muffins.)
- Scoop 2 tablespoons full of batter mixture into the cupcake liners.
- Sprinkle a tablespoon of the topping crumbs from step 14 on the muffin batter.
- Also, sprinkle ¼ cup (2 oz) of white chocolate chips on top of the muffin batter.
- Lastly, preheat the oven at 375 F, bake at 375 F for 16-18 minutes.
Notes
- Melt butter completely before mixing to ensure it blends smoothly with the flour batter.
- Use an electric mixer to combine the thick batter evenly.
- Fold in chopped fresh strawberries and white chocolate chips gently to distribute without deflating batter.
- The crumb topping combines sugars, flour, cinnamon, and melted butter; extra crumbs can be saved for later use.
- Allow muffins to cool slightly on a wire rack after baking before serving to help set the topping.
