Strawberry Cheesecake Bites Recipe

Strawberry Cheesecake Bites blend cream cheese with strawberry cake mix into a dense dough chilled to firm, then dipped in melted almond bark or pink chocolate wafers and decorated with optional white chocolate and sprinkles. This no-bake treat combines creamy cheesecake flavors and fruity cake notes with a smooth, sweet coating for bite-sized indulgence.

Description

In Strawberry Cheesecake Bites, softened cream cheese is beaten smooth with salt and vanilla, then combined with dry strawberry cake mix resulting in a thick, crumbly dough. Chilling the dough allows it to firm up for easy shaping into small balls.

Each ball is dipped into melted almond bark or pink melting wafers and allowed to set, creating a sweet, firm shell around the creamy inside. Optional decorations like white chocolate drizzle and festive sprinkles add visual appeal, especially for seasonal occasions.

These bites offer a convenient, sweet snack requiring no baking, with a smooth texture combining cheesecake richness and strawberry cake flavor. They are suitable for parties, gifts, or easy desserts.

The recipe includes guidance for safely heat treating cake mix before use to ensure food safety, recommending oven baking the mix before combining it with cream cheese.

Ingredients

Servings

Strawberry Cheesecake Bites:

  • 8 ounces cream cheese , softened
  • 1 teaspoon salt fine sea salt
  • 1 teaspoon vanilla extract clear
  • 13.25 Strawberry Cake Mix box
  • 12 ounces almond bark or pink melting wafers

Decoration:

  • white chocolate , optional
  • festive sprinkles optional, Valentines Day

Instructions

  1. In a large mixing bowl using an electric hand mixer or the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese until smooth. Add the salt and vanilla extract until combined.
  2. Add the dry cake mix and continue to beat until smooth. The mixture will be very crumbly, but will come together eventually and be smooth, but thick.
  3. Cover and chill for at least 2 hours, but preferably overnight.
  4. Line a baking sheet with parchment paper. Set aside.
  5. At 30 second intervals, melt the almond bark or pink chocolate wafers, stirring between each until smooth. Alternately, use a double boiler.
  6. Using a 1 tablespoon cookie scoop, make a ball of the dense dough. Using a toothpick or fork, dip this into the melted chocolate, tapping on the side to smooth and shake off excess, then gently place onto the parchment paper.
  7. If adding sprinkles, top while the chocolate is still tacky. Repeat with remaining dough.
  8. Allow the chocolate to set and then, if desired, drizzle with more melted white chocolate. To set faster, chill for 10-15 minutes.
  9. Store in an airtight container in the refrigerator until ready to serve. Store leftovers chilled as well.

Notes

  • This recipe works with either 13.25 or 15.25 oz boxes of strawberry cake mix using the same ingredient amounts.
  • Heat treating the dry cake mix is recommended to eliminate any potential bacteria; this can be done by baking it in the oven at 350°F for 5-10 minutes until it reaches 160°F internally.
  • Microwaving the cake mix for heat treatment is not advised as it may affect texture and flavor.
