Strawberry Clafoutis
Description
Strawberry Clafoutis showcases fresh strawberries suspended in a smooth batter made from eggs, milk, flour, sugar, and vanilla extract. By tossing the strawberries with cornstarch, the fruit juices are gently thickened during baking. The dish is baked until puffed and golden, with a set but tender center that balances the softness of the berries with the light richness of the batter.
The texture of this clafoutis is somewhere between a flan and a pancake, offering a gentle custardy feel complemented by the natural tartness and sweetness of the strawberries. It is best served warm, which emphasizes the fresh fruit flavor and the delicate baked texture.
