Strawberry Cobbler

Strawberry Cobbler is made by baking sliced fresh strawberries over a sweetened batter topped with melted butter in a cast iron skillet or baking dish. The cake bakes around the scattered berries, forming a soft, moist base with a sugary, slightly crisp topping of strawberries and sugar.

Description

This Strawberry Cobbler recipe begins with preheating the oven and melting butter in a cast iron skillet or baking dish. Fresh strawberries are sliced and set aside while a batter is mixed combining brown sugar, whole milk, lemon zest and juice, vanilla, flour, baking powder, and salt.

The batter is poured over the melted butter and the strawberry halves are scattered on top without stirring, preserving their shape. Granulated sugar is sprinkled over the berries before baking for about 45-50 minutes. The heat melts the butter to create a rich crust, while the batter cooks into a tender cake infused with bright lemon and vanilla flavors.

This cobbler highlights the sweetness and juiciness of fresh strawberries with a soft, cakey texture underneath and a lightly crisp, sugared fruit topping. It's comfortable and easy to slice for serving as a warm dessert.

The recipe yields about six servings but can be divided differently. Using a cast iron skillet helps develop a crisp edge and even baking.

Ingredients

Servings
  • 4 Tbsp butter unsalted
  • 1 lb. strawberry washed and patted dry, fresh
  • 1/3 cup packed light brown sugar
  • 3/4 cup milk whole
  • 1 fresh lemon zested and juiced (about 1 Tbsp of juice)
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp kosher salt
  • 2 Tbsp granulated sugar

Instructions

Prepare

  1. Preheat oven to 350°F. While oven is preheating, add butter to an 8 inch cast iron skillet (or 8x8" baking dish), and add it to the oven for a few minutes so the butter will melt as the oven preheats.
  2. When the butter is melted, remove the skillet from the oven and set aside.

Prep berries and make batter

  1. Slice the stem end off of each strawberry, then slice the berry in half lengthwise. Set aside.
  2. In a mixing bowl, add the brown sugar, whole milk, lemon zest, lemon juice, and vanilla extract. Whisk until smooth and combined.
  3. Add flour, baking powder, and salt, whisking until you have a mostly smooth batter. A few lumps are okay.

Assemble cobbler

  1. Pour the batter into the skillet with the melted butter, then sprinkle with sliced strawberries. Don't stir, just leave the berries scattered over the top of the batter.
  2. Sprinkle the granulated sugar over the top of the berries.

Bake

  1. Bake in preheated oven for 45-50 minutes (55-60 minutes if using a baking dish instead of the skillet), or until the cobbler is golden brown, puffed up, and the juices are bubbly.

Cool and serve

  1. Let the cobbler cool for 15 minutes, then serve warm (or at room temperature) with vanilla ice cream if you prefer.

Notes

  • Estimated to serve 6, but can be divided as desired.
