Strawberry Cobbler

Strawberry Cobbler combines a sweet, juicy strawberry filling thickened with cornstarch and brightened with lemon juice, topped with a tender biscuit-like crust made from a mixture of flour, sugar, baking powder, butter, and heavy cream. The baked cobbler offers a warm, comforting dessert with bubbling berries and a golden brown, soft topping. It's great served warm with vanilla ice cream.

Description

This Strawberry Cobbler consists of a fruit filling made by mixing quartered strawberries with sugar, cornstarch, salt, and lemon juice, which helps thicken and balance the sweet and tart flavors during baking. The filling goes into a buttered baking dish ready to bubble up when cooked.

The cobbler topping is a biscuit-style dough made by combining flour, sugar, baking powder, salt, and cold butter until coarse crumbs form, then adding heavy cream to create a soft dough that is scattered over the strawberries. When baked, the topping rises and browns to form a tender, golden crust that contrasts with the juicy berries underneath.

This dessert is best served warm, ideally accompanied by vanilla ice cream which adds creamy richness that complements the fruit and biscuit textures. It’s a classic homemade treat highlighting fresh strawberries and a flaky, buttery topping.

Using a glass baking dish helps monitor browning. A metal dish can be substituted but may affect baking time. If no food processor is available, the topping can be prepared using manual methods like a pastry cutter and mixing by hand.

Ingredients

Servings

Strawberry Filling

  • 1 ½ lbs strawberries washed, stems removed, and quartered
  • ¼ cup granulated sugar
  • 2 ½ teaspoons cornstarch
  • ¼ teaspoon salt
  • 1 Tablespoon lemon juice

Cobbler Topping

  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • 1 ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 4 Tablespoons butter cold and cut into 4 pieces, unsalted
  • ½ cup heavy cream

Instructions

  1. Preheat oven to 350F (175C) and lightly butter the sides and bottom of an 8x8 glass baking dish¹. Set aside.
  2. In a large bowl, stir together strawberries, sugar, cornstarch, salt, and lemon juice until completely combined. Set aside.
  3. In a food processor² combine flour, sugar, baking powder, and salt and pulse until combined.
  4. Add butter and pulse until mixture resembles coarse crumbs. Add heavy cream and pulse again until mixture is just beginning to clump together and forms a soft dough.
  5. Give your strawberry mixture one more stir and then pour mixture into prepared baking dish.
  6. Use your hands to evenly scatter cobbler topping over the berries.
  7. Transfer to 350F (175C) oven and bake for 35-40 minutes or until strawberries are bubbling and cobbler topping is baked through and golden brown on top.
  8. Serve warm, preferably topped with vanilla ice cream!

Notes

  • Butter the baking dish well to prevent sticking and achieve even baking.
  • Glass baking dishes are recommended, but metal dishes can be used; be aware that baking times may vary.
  • If you don’t have a food processor, cut the butter into the dry ingredients with a pastry cutter or grater, then stir in cream to form the topping dough.
  • Serve warm with vanilla ice cream for classic pairing.
