Strawberry Cookies
Description
Strawberry Cookies feature diced fresh strawberries that are tossed with lemon juice to preserve freshness and add brightness. The cookie dough blends all-purpose flour, baking powder, sugar, and salt, into which cold butter is cut to create a coarse texture. Mashed bananas, milk, and citrus zest provide moisture and flavor. The strawberries are gently folded into the dough to distribute fruit evenly without overmixing, preserving texture.
Baked at 375°F, these cookies develop a tender crumb with pockets of soft fruit. The lemon or orange zest lifts the flavor, while the bananas add natural sweetness and help keep the moisture. Using a cookie scoop manages the wetter dough, forming consistent-sized cookies that hold their shape well.
These cookies are enjoyable as a fresh snack or dessert, offering a fruity variation on traditional cookies. They can be stored at room temperature with a slice of bread to retain moisture and freeze well for longer storage.
Notes in the recipe emphasize using fresh lemon juice on strawberries, ensuring cookies cool completely before storage, and suggest freezing wrapped or in airtight containers for up to three months. Reheating is not specified but thawing at room temperature is recommended.
Ingredients
- 2 cups strawberries hulled and diced
- 1 teaspoon lemon juice
- 2 cups all-purpose flour
- 2 teaspoon baking powder
- ½ cup sugar granulated
- ½ teaspoon salt
- 8 tablespoons butter unsalted
- 2 medium banana
- ⅔ cup milk
- 1 tablespoon orange zest or lemon zest
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven and baking sheet. Preheat oven to 375°F. Line a baking sheet with parchment paper.
- Prep the strawberries. Clean and chop the strawberries, place them in a bowl and add the lemon juice over them.
- Mix the dry ingredients. In a large bowl, add the flour, baking powder, sugar, salt and combine together. Using a fork or knife cut in the butter until the mixture resembles peas.
- Combine the wet ingredients. In another bowl, mash the bananas using a fork. Add the milk, zest from lemon or orange, vanilla extract and mix.
- Combine wet and dry ingredients. Add the wet ingredients and strawberries to the dry mixture and mix well using a spatula. Do not over-mix.
- Form cookies. Using a cookie scoop, scoop out cookie dough and place on the prepped baking sheet, leaving a couple inches in between the cookies.
- Bake and cool. Transfer the baking sheet to the oven and bake for 25 minutes. Cool and enjoy!
Notes
- Use a cookie scoop to handle the moist dough and shape uniform cookies on a lined baking sheet.
- Add freshly squeezed lemon juice to the strawberries to enhance flavor and maintain freshness in the cookies.
- Allow cookies to cool completely before storing in an airtight container to keep their texture.
- Store at room temperature with a piece of bread in the container to maintain moisture for 3 to 5 days.
- Freeze cookies individually wrapped or in airtight containers for up to 3 months; thaw at room temperature for 15 minutes before serving.
