Ingredients
For the crust & topping:
- ½ cup granulated sugar
- 1 ½ cups all-purpose flour
- ½ teaspoon baking powder
- 1/2 teaspoon salt
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup butter cold, salted
For the strawberry filling:
- 1 pound strawberry diced up, fresh
- 2 teaspoons cornstarch
- 1/3 cup granulated sugar
Instructions
- Preheat oven to 375ºF. Prepare a 8x8 inch baking dish by lining it with foil or parchment paper allowing the edges to overhang the pan for easy removal. Then, spray the lining with cooking spray.
- In a large bowl, add the ½ cup sugar, flour, baking powder and salt and mix until combined.
- Then, add the egg and vanilla. Mix well.
- Cut the cold butter into the flour mixture until it is crumbly.
- Take half of the flour mixture and pack it down in the bottom of your pan. Reserve the remaining crumbs for the topping.
- In a medium bowl, combine the diced strawberries, 1/3 cup sugar and cornstarch. Mix until the strawberries are coated well.
- Spread the sweet strawberry filling over the bottom layer in the pan and spread out evenly.
- Sprinkle the rest of the flour mixture evenly over the top of your strawberries.
- Bake for 35-40 minutes, until the top is golden brown. Allow to cool completely before cutting with a sharp knife.
- Store in an airtight container in the fridge for up to 4 days.
