Strawberry Crumble
Description
Strawberry Crumble focuses on layering fresh strawberries with a thickened sugar and cornstarch filling, covered by a textured topping made from oats, flour, brown sugar, cinnamon, and melted butter. The fruit softens in the heat but retains some shape, while the topping crisps and turns golden brown. Cooking continues until bubbling syrup around the edges indicates the filling has thickened appropriately, preventing excess liquid when served.
The dish is typically served warm with a dollop of vanilla ice cream, cream, or custard which complements the sweet and tart fruit and crunchy crumble. It can be prepared in an ovenproof baking dish around 1.5 liters in volume.
Adjust the sugar in the filling depending on the ripeness of the strawberries and sweetness preference. Allow the crumble to rest briefly after baking for the syrup to settle. The crumble can be assembled ahead and stored in the fridge before baking for convenience.
Ingredients
Topping
- 3/4 cup rolled oats quick cooking is ok, or oatmeal
- 3/4 cup all-purpose flour plain/all purpose
- 3/4 cup brown sugar (loosely packed)
- 1/2 tsp baking powder
- 3/4 tsp cinnamon powder
- Pinch salt
- 90g / 6 tbsp butter melted, unsalted
Strawberry Filling
- 1 kg / 2 lb strawberries , ripe
- 2 1/2 tbsp cornstarch or cornflour
- 1/3 - 1/2 cup white sugar (Note 1)
- 2 tbsp water
- 1 tsp vanilla extract
To Serve
- vanilla ice cream , dollop cream or custard
Instructions
- Preheat oven to 180C/350F.
Topping:
- Place all ingredients except butter in a bowl. Mix to combine. Add butter and mix to incorporate.
Strawberry Filling:
- Hull / cut top off strawberries. Cut larger ones in half, leave small ones whole (2cm / 4/5" height).
- Place strawberries in bowl. Scatter over cornflour, toss well to coat evenly.
- Add sugar, water and vanilla. Mix well.
Assemble and bake:
- Pour strawberries into a baking pan (Note 2). Crumble over topping, using your fingers to get some nice crumbly chunks.
- Bake for 30 to 40 minutes until the Topping is deep golden and the strawberry syrup is bubbling up energetically all around the edges - see video, this is a key sign that the strawberry sauce has thickened sufficiently.
- Stand for a few minutes before serving with ice cream or your choice of topping.
Notes
- Adjust sugar amount between 1/3 to 1/2 cup depending on strawberry sweetness and personal taste.
- Use a baking dish around 1.5 liters or 7x11 inches; smaller pans can be used for leftovers.
- Look for deep golden topping and bubbling syrup around edges as an indicator that the filling is set.
- If syrup is too watery after baking, return the crumble to the oven to thicken further.
- Assemble crumble in advance, refrigerate, and bake when ready; do not let strawberry mixture sit coated with sugar for too long to avoid excess softening.
