Strawberry Fluffy Cookies

Report
Strawberry Fluffy Cookies transform strawberry cake mix into soft, foamy cookie batter combined with Cool Whip and egg. Rolled in powdered sugar and baked briefly, these cookies develop a light texture with a delicate sweetness. The powdered sugar coating adds a slightly crisp exterior while keeping the interior tender. They require careful handling on a greased pan to prevent sticking and are cooled fully before serving.

Description

Strawberry Fluffy Cookies use strawberry cake mix as a base combined with Cool Whip and egg to create a light cookie dough. The mixture is foamy after mixing and forms a soft batter that yields tender cookies after baking briefly at 350°F.

After scooping, each dough ball is rolled in powdered sugar which bakes into a slightly crisp shell around a soft and airy center. The recipe highlights the importance of greasing the cookie sheet to prevent sticking, as well as watching for the cookies to just begin browning at the edges to avoid overbaking.

Cooling the cookies on the baking sheet then transferring to a wire rack helps preserve their soft texture. These cookies offer a sweet, fruity variation on traditional cookies through the use of cake mix and whipped topping.

Ingredients

Servings
  • Strawberry Cake Mix
  • 8 oz Cool Whip
  • 1 egg
  • ½ cup powdered sugar

Instructions

  1. Preheat oven to 350F. Spray cookie sheet with non-stick cooking spray (this is really important for these cookies or they will stick to the pan).
  2. Mix together the cake mix, cool whip and egg with a hand held mixer. This will be very "foamy" at first. Just keep mixing until everything is well combined and a batter is formed.
  3. Using a small cookie scoop, scoop one ball at a time and roll in powdered sugar.
  4. Place cookies, on greased cookie sheet about 2 inches apart.
  5. Bake at 350F for 8-10 minutes. If these start to brown just a tiny bit around the edges, they are done. Do not over-bake them.
  6. Let the cookies cool on the baking sheet for 5 minutes and then transfer them to a wire rack to cool completely. Enjoy!
