Strawberry Goat Cheese Salad
Description
The Strawberry Goat Cheese Salad includes mixed greens layered with fresh strawberries sliced to complement the salad, peeled and quarter-moon sliced English cucumbers, thinly sliced red onion, and a mix of walnuts, pecans, and almonds that add varied nutty textures. Crumbled soft goat cheese brings a creamy and slightly tangy contrast. The balsamic dressing is emulsified from olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, salt, and pepper to provide acidity and slight sweetness that unites the salad components.
The salad texture is a mix of crunchy nuts, crisp cucumber, tender greens, sweet juicy berries, and creamy cheese. The nut mix enriches the salad with a deep flavor variety, while the dressing's acidity enhances each ingredient’s distinct taste. The vinaigrette can be added just before serving or served on the side to maintain freshness.
For storage, keep the salad undressed separately in an airtight container or covered bowl in the refrigerator for 2 to 3 days. The dressing should be stored separately as well to avoid sogginess. Nut-free variations simply omit walnuts.
Ingredients
The Salad:
- 10 ounces lettuce mixed green
- 1 quart strawberries hulled and sliced, fresh, about 1 ½ cups
- 1 medium English cucumber peeled and cut into quarter moons
- ¼ red onion thinly sliced
- ¼ - ⅓ cup walnuts
- ¼ - ⅓ cup pecans
- ¼ - ⅓ cup almonds
- 2 - 3 ounces soft goat cheese crumbled
Balsamic Dressing:
- ¼ cup extra-virgin olive oil
- ¼ cup balsamic vinegar
- 1 - 2 teaspoon honey
- 1 teaspoon Dijon mustard
- 1 clove garlic minced
- ¼ teaspoon salt more to taste
- ¼ teaspoon black pepper
Instructions
- Make the dressing by whisking together ingredients in a small bowl or mason jar until olive oil and balsamic vinegar emulsify - meaning there are completely mixed and no longer separate. Taste and adjust seasoning to your liking by adding more balsamic, salt, pepper, and/or olive oil, if desired.
- Add mixed greens to a large salad bowl and layer on the strawberries, cucumber, sliced red onion, walnuts, and goat cheese.
- When ready to serve, drizzle dressing on the salad and gently toss to combine or serve with dressing on the side. Enjoy!
Notes
- Omit walnuts to make the salad nut-free while retaining texture with pecans and almonds.
- Store the undressed salad in an airtight container in the refrigerator for up to 3 days.
- Keep dressing separate to prevent the salad from becoming soggy before serving.
- Serve with dressing on the side to maintain freshness if preparing in advance.
