Strawberry Ice Cream

Strawberry Ice Cream balances fresh diced strawberries with a creamy base of whole milk, heavy cream, sugar, and vanilla. The strawberries are macerated with sugar before being gently folded in during churning, resulting in bursts of sweet fruit throughout a smooth, rich frozen dessert. The ice cream can be softened by chilling and firmed in the freezer before serving.

Description

The Strawberry Ice Cream combines fresh diced strawberries macerated with sugar to release their juices, mixed into a chilled blend of whole milk, heavy cream, sugar, and pure vanilla extract. The mixture is churned in an ice cream maker for about 25 to 30 minutes. Strawberries are added towards the end of churning to incorporate evenly without losing texture. The result is a creamy, fruity frozen treat with bright strawberry pieces dispersed throughout.

The ice cream may be soft when finished churning and requires time in the freezer to firm up, typically 2 to 3 hours. Using fresh ripe strawberries is recommended for sweetness and flavor, though frozen chopped berries can work if used direct from frozen to preserve texture. Natural food coloring from juice can enhance the pink hue.

This ice cream suits summertime desserts or homemade sundaes. A drizzle of hot fudge can complement the fresh strawberry flavor. The recipe allows for advancing preparation by mixing the dairy and sugar base the day before chilling.

Ingredients

Servings
  • 1 ½ cups strawberry diced and chilled, fresh
  • 1 cup sugar plus 2 TB extra
  • 1 cup milk whole
  • 2 cups heavy cream
  • 1 tsp vanilla extract pure

Instructions

  1. Mix diced strawberries with 2 TB sugar to macerate. Chill in fridge while you proceed with the recipe (can macerate up to 1 hour).

  3. Turn ice cream make on and pour very cold milk/cream mixture in. Follow directions on your ice cream maker for churning; generally about 25-30 minutes.
  4. During last 5-10 minutes of churning, add drained strawberries.
  5. Ice cream may be soft and need to firm up in freezer for 2-3 hours before serving.

Notes

  • Measure ingredients carefully to avoid overflowing the ice cream machine during churning.
  • Use ripe fresh strawberries for best flavor; if using frozen, chop by pulsing and add frozen without thawing or macerating.
  • For a vegan alternative, frozen berries like blueberries or blackberries can be used.
  • The cream, sugar, milk, and vanilla mixture can be made and chilled one day ahead.
  • Serve strawberry ice cream with hot fudge sauce for a classic sundae.
