Strawberry Jello Pie
Description
This pie starts by washing and hulling fresh strawberries and arranging them in a blind-baked and cooled 1-inch pie shell. A mixture of water, cornstarch, and sugar is heated until thickened and translucent, then combined with strawberry gelatin powder and poured over the berries. Refrigeration ensures the gelatin sets firmly around the strawberries.
Heavy cream whipped with powdered sugar and vanilla forms a light topping spread over the gelled filling. Extra fresh strawberries garnish the pie, adding natural sweetness and visual appeal. The combination of smooth cream, juicy fruit, and firm gelatin creates varied textures.
Serving this pie cold highlights its cooling and fruity qualities. The whipped cream can be omitted if preferred, as the pie remains flavorful without it. It is best prepared ahead to allow the gelatin to fully set and can be sliced cleanly for serving.
Ingredients
- 1 inch pie shell blind baked
- 1 ½ cups strawberries fresh + more for garnish, if desired
- 1 cup water
- 2 tablespoons cornstarch
- ¾ cup granulated sugar
- 3 oz strawberry gelatin dessert mix JELL-O brand
- 1 cup heavy whipping cream
- 3 tablespoons powdered sugar
- ½ teaspoon vanilla extract
Instructions
- Wash and hull strawberries. Place them upside down in baked (and cooled) pie shell and set aside.
- In a liquid measuring cup or small bowl, pour in water, cornstarch and sugar. Stir until mostly dissolved. Microwave 1-2 minutes until mixture bubbles up and thickens. (It should turn translucent.)
- Stir strawberry jello powder into sugar water mixture and pour over strawberries. Cover and refrigerate until set, 2-3 hours.
- In a large bowl, using a hand mixer or stand mixer, whip heavy cream, sugar and vanilla extract together until stiff peaks form.
- Spread whipped cream over top the pie and garnish with more fresh strawberries. Serve cold.
Notes
- Whipped cream adds a creamy element but pie is enjoyable without it.
- Use fresh strawberries both in the filling and as garnish for best flavor and presentation.
- Ensure the pie shell is blind-baked and cooled before assembling.
- Chill the pie for 2-3 hours to allow the gelatin mixture to fully set before serving.
