Description
Strawberry Lemon Bars begin with a batter of softened salted butter and sugar beaten until creamy, to which egg, lemon juice, and optional lemon zest are added. The dry ingredients, flour and baking soda, are mixed separately before folding into the wet mixture. Fresh diced strawberries are carefully folded in before spreading the batter evenly in a lined 9x9 pan and baking for 40 to 45 minutes until set and a toothpick inserted comes out mostly clean.
This baking method creates a soft, cakey texture with pockets of juicy strawberry. The glaze, made from powdered sugar, lemon juice, and chopped strawberries (not pureed), is spread on top once cooled and allowed to harden, adding a bright, sweet-tart finish and a slight sticky sheen. The glaze adds fresh strawberry flavor and enhances the lemon brightness.
These bars can be cut into squares and served as a dessert or sweet snack. The combination of strawberries and lemon makes them refreshing and suitable for spring or summer occasions.
Ingredients
- 1 cup butter softened, salted, 2 sticks
- 1 cup sugar
- 1 large egg
- 1/4 cup lemon juice
- 1 tablespoon lemon optional, zest
- 2 1/3 cups flour
- 1/2 teaspoon baking soda
- 1 1/4 cups strawberry diced, fresh
Glaze:
- 1 1/4 cups powdered sugar
- ½ cup strawberries chopped (NOT pureed)
- 2-3 tablespoon lemon juice
Instructions
- Preheat the oven to 350 degrees and line a 9x9 baking dish with parchment paper.
- Using a large bowl, beat the butter and sugar until creamy and fluffy.
- Add the egg and beat until combined.
- Beat in the lemon juice and zest.
- Using a separate bowl whisk the flour and baking soda.
- Slowly add the dry mixture to the wet ingredients.
- Using a rubber spatula carefully fold in the diced strawberries.
- Scoop the batter into the prepared baking pan and spread evenly.
- Bake for 40-45 minutes.
- Place a toothpick into the center to see if the bars are done.
- Place onto the counter to cool before adding glaze.
Glaze:
- Using a large bowl, whisk together the powdered sugar and the lemon juice.
- Gently fold in the chopped strawberries.
- Smooth onto the blondies and allow the glaze to harden before enjoying!
