Strawberry Lemon Blondies

Strawberry Lemon Blondies blend tart lemon juice and fresh diced strawberries into a buttery blondie base, creating a soft, moist bar with a balance of fruity and buttery flavors. Finished with a strawberry-lemon glaze, the blondies offer a bright, summery dessert ideal for gatherings or as a sweet treat.

Description

Strawberry Lemon Blondies are made by creaming butter and sugar, then beating in an egg and fresh lemon juice to add a citrus note. The dry ingredients of flour, baking powder, and salt are combined separately before folding into the wet mixture along with diced fresh strawberries, which add bursts of sweetness and moisture throughout.

The batter is baked in a parchment-lined pan until a toothpick comes out clean, ensuring a tender yet structured texture. Once cooled, a glaze made from strawberry jelly, lemon juice, and powdered sugar is spread on top for added tanginess and color, with optional red or pink food coloring enhancing the visual appeal.

These blondies offer a soft, fruity dessert that pairs well with tea or coffee and can be sliced into bars for sharing.

Ingredients

Servings

Blondies

  • 1 cup unsalted butter softened, 2 sticks
  • 3/4 cup granulated sugar
  • 1 egg
  • 1/4 cup lemon juice fresh squeezed
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup strawberry diced (measure the 1 cup after dicing, fresh

Frosting

  • 1 tablespoon strawberry jelly not jam
  • 1 tablespoon lemon juice fresh squeezed
  • 1 cup powdered sugar
  • red food coloring optional, or pink food coloring

Instructions

  1. Preheat oven to 350F. Line a 9x9-inch baking dish with parchment paper, leaving some sticking up from two sides to make it easier to lift the blondies out of the pan after baking.
  2. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy, then beat in the egg. Beat in the 1/4 cup fresh lemon juice. Be aware that the lemon juice might not fully incorporate.
  3. In a medium mixing bowl, whisk together the flour, baking powder, and salt. Mix into the wet mixture until well combined. Gently fold in the fresh strawberries.
  4. Scoop the blondie dough into the prepared baking dish and gently spread out evenly.
  5. Bake the blondies at 350F for 30-35 minutes, just until a toothpick inserted into the center comes out clean. Do not over-bake. Let the blondies cool for 5 minutes in the pan, then lift out and cool completely to room temperature before cutting into bars.
  6. In a small bowl, melt the strawberry jelly in the microwave in 15 second increments, just until melted. Add the 1 tablespoon of lemon juice and 1 cup powdered sugar; whisk until smooth. If desired, add a drop or two of red or pink food coloring for brighter color. Drizzle the frosting over top of the cooled blondies.
