Strawberry Lemon Blossoms

Strawberry Lemon Blossoms are mini muffins made from boxed strawberry cake mix combined with instant lemon pudding mix, eggs, and vegetable oil. Baked in mini muffin tins, they are dipped in and drizzled with a lemon glaze made from powdered sugar, fresh lemon juice and zest, oil, and water, resulting in tender, sweet blossoms with a bright citrus finish.

Description

This recipe blends the sweetness and strawberry flavor of a cake mix with the tangy, creamy element of instant lemon pudding. The batter is mixed with eggs and oil for moisture and richness, then portioned and baked in greased mini muffin tins until set. While baking, a glaze consisting of powdered sugar, fresh lemon juice and zest, vegetable oil, and water is prepared to coat the warm muffins.

The final product has a soft crumb with a balanced sweetness and distinct lemon aroma from the glaze, enhancing the strawberry base. The glaze is applied while the muffins are warm to allow absorption, then drizzled again after cooling for extra coverage and shine.

These blossoms serve well as bite-sized treats or party snacks, combining fruity cake with bright, tangy citrus in a convenient form. The recipe uses readily available mixes for ease and consistent results.
