Ingredients

Scones

  • 250 gms all-purpose flour you may need a bit more if your strawberries release a lot of moisture, 2 cups + 2 tbsp
  • 50 gms granulated sugar ¼ cup
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 tbsp lemon zest
  • 115 gms unsalted butter cubed and cold, ½ cup
  • 1 egg
  • 60 ml heavy cream plus more for brushing, ¼ cup, whipping cream
  • 60 ml sour cream ¼ cup
  • 1 tbsp lemon juice
  • ½ tsp vanilla extract
  • 150 gms strawberry finely chopped, 3/4 cup

Glaze

  • 125-190 gms powdered sugar 1-1 ½ cup
  • 2-3 tbsp lemon juice
  • 1 tsp lemon optional, zest

Notes

  • Because strawberries can release a lot of moisture into the dough (which can make your dough too wet), try to use dry strawberries instead of juicy ones. If your strawberries are really juicy, then you will need to pat as much moisture as possible out of the strawberries with a paper towel.
