Strawberry Margarita Cake

The Strawberry Margarita Cake combines two boxes of white cake mix with lime juice, lime zest, and tequila for a citrusy, moist layered cake. The frosting adds strawberry puree, tequila, triple sec, butter, and confectioners sugar for a boozy, fruity icing with zest. Baked in three 9-inch pans, the cake layers are leveled and stacked with generous frosting. This cake’s flavor profile is bright and refreshing, with a balance of sweet, tart, and adult beverage notes making it an indulgent dessert for celebrations.

Description

This cake uses white cake mix blended with egg whites, water, and canola oil to achieve a light texture. Fresh lime juice and zest are whisked into the batter along with tequila, infusing the cake with citrus and subtle alcoholic notes. The batter is divided evenly among three 9-inch pans and baked until a toothpick comes out clean, resulting in tender, moist layers.

The frosting mixes softened unsalted butter, tequila, triple sec, strawberry puree, confectioners sugar, and lime zest. Whipped until smooth and stiff peaks form, it provides a creamy and flavorful contrast to the cake’s crumb. Layered with frosting between the cake rounds and over the top, the result is a visually appealing and flavorful cake with a balanced taste of fruitiness, citrus, and a hint of agave spirit.

The cake is suited for festive occasions where a boozy yet sweet dessert is desired. It requires cooling and leveling of cake layers before assembling and decorating. The recipe references additional standard white cake ingredients and suggests attention to cake pan preparation and baking time.
