Ingredients

  • 2 cups heavy whipping cream
  • 2/3 cups Swerve confectioner's sweetener
  • 1 cup Strawberry Puree sugar-free

Instructions

  1. Ensure strawberry puree is cooled and set aside. 
  2. Place large bowl and whipping whisks in the freezer to get cold (about 30 minutes is all you need). 
  3. Remove bowl and whisk from freezer and add whipping cream. Whip until soft peaks are just beginning to form. Add the sweetner and continue whipping until soft peaks form.
  4. Fold the berries into the whipped cream using a rubber scraper (under over motion) until fully incorporated. 
  5. Scoop into individual serving dishes and chill for about 2 hours.  
  6. Garnish with additional fruit or half or a Vortman Bakery wafer. 

Notes

  • Chill all equipment and ingredients before whipping to maximize volume of the mousse.
  • Fold strawberry puree gently into whipped cream to preserve airiness for a light texture.
  • Chill mousse for at least two hours to allow it to set properly before serving.
  • Garnish with fresh fruit or wafers such as Voortman Bakery wafers to add texture and complement flavors.
