Strawberry Nice Cream
Description
Strawberry Nice Cream relies on ripe banana chunks and frozen strawberries pureed together for a naturally sweet, creamy dessert without dairy. Almond milk and pure vanilla extract integrate moisture and flavor. For added sweetness, agave nectar can be incorporated, adjusting to taste.
Blending the frozen fruit first breaks it down before adding liquids, resulting in a smooth texture reminiscent of soft-serve ice cream. Serving immediately yields a soft, scoopable consistency, while spreading in a pan and freezing for about an hour firms it up more.
When storing leftover nice cream in the freezer, it will become quite hard. Letting it thaw at room temperature briefly returns it closer to spoonable consistency. This dessert serves as a plant-based, fruit-forward frozen treat with a balance of creamy banana and bright strawberry flavors complemented by vanilla.
Agave nectar is optional and not included in nutritional calculations. The recipe assumes preferred sweetness can be adjusted during preparation.
Ingredients
- 2 banana large, ripe
- 16 ounces strawberry frozen
- ⅔ cup almond milk or other plant-based milk, unsweetened
- 1 teaspoon vanilla extract pure
- 2 teaspoons agave nectar (optional)*
Instructions
- Place the banana chunks and frozen strawberries in the bowl of a food processor. Pulse until the fruit is finely chopped.
- Add the almond milk and vanilla extract. Puree until smooth, scraping down the sides with a spatula as necessary.
- Taste the nice cream. If you prefer a sweeter flavor, add agave nectar, then blend again.
- Serve immediately for a soft-serve consistency, or spread it evenly in a loaf pan and freeze for about an hour to make the mixture firmer.
- If there are leftovers, cover and freeze for up to a week. The nice cream will become quite hard. Take it out of the freezer and let it thaw at room temperature until the desired consistency is achieved.
Notes
- Adjust sweetness by adding agave nectar to taste before blending.
- Serve immediately for a soft-serve texture or freeze to firm the dessert further.
- Frozen leftovers become hard; allow to thaw at room temperature before serving to soften.
- Use ripe bananas for natural sweetness to improve flavor and texture.
- Nutritional information may not account for added sweeteners such as agave nectar.
