Strawberry Oatmeal Bars
Description
These bars start with a blend of flour and quick-cooking oats combined with sugars and baking powder, all held together with melted salted butter and vanilla extract. Part of the oat mixture presses firmly into the pan to create a sturdy base, while the rest is reserved for sprinkling on top of the jam filling before baking. The layered structure yields a tender crust underneath, a fruity center, and a crisped, crumbled oat topping.
Baking uncovered at 3506F allows the top to develop a golden brown color without becoming overly hard. Cooling fully before adding the powdered sugar, milk, and vanilla glaze helps prevent melting or sogginess, giving a smooth finish and extra sweetness to the bars.
The recipe permits replacing the strawberry jam with any favorite type, offering customization to match personal taste or seasonal fruits. Omitting the glaze can reduce sweetness and highlight the jam flavor.
Ingredients
For the bars:
- 1 1/4 cups flour
- 1 1/4 cups oats quick cooking
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 teaspoon baking powder
- 3/4 cup butter melted, salted
- 1 teaspoon vanilla extract
- 1 cup strawberry jam
For the glaze:
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350 degrees. Line a 9x13 baking dish with parchment paper or spray with non-stick spray.
- In a medium bowl, combine the flour, oats, sugar, brown sugar, and baking powder. Mix well.
- In a small bowl combine the melted butter and vanilla, and mix into the flour sugar mixture until the consistency is crumbly. Reserve 1 1/2 cups of the oat mixture and set aside.
- Press the remaining mixture into the bottom of the prepared baking dish.
- Gently spread the jam over the crust, being careful not to break the crust as you spread.
- Sprinkle the reserved oat mixture over the top of the jam.
- Bake uncovered for 30 minutes or until the top is golden brown.
- Let bars cool completely before preparing the glaze.
- To make the glaze, whisk together the powdered sugar, milk, and vanilla until smooth. Drizzle over the bars.
Notes
- Use any preferred jam variety in place of strawberry to customize the bars' fruit flavor.
- The vanilla glaze adds notable sweetness; omit it if you wish to reduce sugar content.
