Strawberry Overnight Oats (Vegan)

Strawberry overnight oats are the perfect answer to a quick breakfast you can easily make ahead, They only take a few minutes to throw together and they are easy to grab in the morning to eat quickly or carry on the go.

Ingredients

Servings
  • 1 cup of plant-based milk
  • pinch of salt
  • ¼ teaspoon of vanilla extract
  • 2 dates
  • ¾ cup of Strawberries
  • 1 Tablespoon of maple syrup or agave or brown sugar
  • 1 Tablespoon of shredded coconut, optional
  • 1 cup of rolled oats

Instructions

  1. Blend all ingredients except the oats in a blender.
  2. Add mixture to oats in a jar or a container with a lid.
  3. Place in the refrigerator overnight or for at least 6 hours.

Notes

  • They need time to sit. The oats slowly absorb the plant-based milk while stored cold in the refrigerator. Depending on how soft you prefer your oats, they will need at least 6-8 hours until ready.
  • Use old-fashioned oats: While quick oats work fine, less processed oats give the overnight oats more texture.
  • Save time: Make a double or triple batch so you have an easy breakfast during the week.
