Ingredients
- 1 1/2 cups all-purpose flour
- 3 tablespoons brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups buttermilk
- 2 eggs
- 3 tablespoons melted butter plus more for the pan
- 1 tablespoon vanilla extract
- 1 1/2 cups diced strawberries
Instructions
- In a large bowl, whisk together the flour, brown sugar, baking powder, and salt.
- In another bowl, mix together the buttermilk, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Mix just until combined. Add the diced strawberries and lightly fold them into the batter.
- Heat a griddle or skillet. Lightly coat the pan with butter. Pour about 1/3 cup of batter onto the hot surface. Cook until bubbling and golden on the edges, then flip and cook until the second side is golden.
- Remove and continue until all of the batter has been used.
- Serve warm with strawberry syrup or maple syrup.
