Strawberry Pie Bars

Strawberry Pie Bars feature a buttery dough base topped with vibrant strawberry pie filling and a crumbly dough topping. Finished with a glaze combining powdered sugar, vanilla, almond extract, and milk, these bars balance sweet, tart, and nutty flavors. Baking until golden and cooling properly gives a firm, sliceable texture suitable for sharing or dessert occasions.

Description

These bars start with a rich mixture of softened butter, sugar, eggs, vanilla, almond extract, flour, and salt forming the dough. A portion of the dough is spread evenly in a pan to create the crust, followed by a generous layer of strawberry pie filling. Dollops of remaining dough on top provide a textured, crumbly finish after baking. Once removed from the oven, the bars cool completely before being glazed with a vanilla and almond-flavored icing, which adds moisture and sweetness.

The strawberry filling provides a bright, fruity center blending well with the buttery, tender crust and topping. The almond extract in both dough and glaze adds a subtle nutty dimension complementing the strawberries. Baking until a toothpick inserted comes out clean ensures the bars are fully cooked with a satisfying crumb.

These bars work well as a portable dessert or snack, especially when chilled slightly. Applying the glaze right before serving avoids sogginess and preserves the texture of the crust and topping.
