Strawberry Pie Filling Recipe
Description
The Strawberry Pie Filling Recipe uses six cups of fresh strawberries mixed with bright lemon zest and juice. The liquid base, sweetened with sugar and thickened with cornstarch, is cooked until thickened. After simmering the berries gently in the thickened mixture, strawberry gelatin powder is stirred in off the heat, which helps the filling set as it cools. The filling is then cooled at room temperature and chilled in the refrigerator to fully thicken and set before use.
The resulting pie filling has a balance of fresh fruit flavor enhanced by citrus brightness and a smooth, slightly gelled texture from the gelatin. This makes it ideal as a topping or filling for fruit pies or other desserts where a fresh strawberry flavor is desired without a runny texture.
Once prepared, the filling should be stored in a sealed container in the refrigerator and will keep for up to five days. This recipe focuses on creating a set filling without adding gelatin separately or relying solely on starch, offering a classic texture for strawberry pies.
Ingredients
- 6 cups strawberry cored and sliced, fresh
- lemon juice of 1
- lemon zest of 1
- 1 cup granulated sugar white
- 1/4 cup cornstarch
- 1 1/4 cup water
- 1 3.4- ounce strawberry gelatin powder box
Instructions
- In a large bowl, stir together the strawberries, lemon zest, and lemon juice. Set aside.
- Whisk the sugar, cornstarch, and water in a large saucepan over medium heat until smooth and combined. Bring to a boil and boil for 1 minute.
- Add the strawberries, gently stir in, and simmer for 2-3 minutes.
- Remove saucepan from the heat and gently stir in the Jell-O powder, careful to not crush the strawberries.
- Let the mixture cool at room temperature for 2 hours, then refrigerate until fully chilled and settled. Transfer to a sealed container and refrigerate for 5 days.
- Use on pies or other desserts.
