Strawberry Pie Recipe
Description
The Strawberry Pie Recipe starts by whisking together granulated sugar, water, strawberry gelatin powder, and cornstarch in a medium saucepan. Heating this mixture to boiling thickens it into a glaze. Fresh strawberries, quartered, are then stirred into the warm, thickened gelatin mixture to coat evenly.
The coated strawberries are poured into a pre-made 9-inch graham cracker pie crust, distributing the fruit uniformly. The pie is chilled in the refrigerator for at least three hours to allow the gelatin filling to set firmly, creating a bright, sweet, and slightly tart fruit dessert.
This pie is served cold, often accompanied by a dollop of whipped cream for added creaminess. The graham cracker crust provides a crunchy contrast to the soft, gelatin-coated strawberries, making it suitable as a light summer dessert.
An alternate crust option includes a baked pastry pie shell, which can be cooled before adding the filling for a different texture and flavor base.
Ingredients
- 1 cup granulated sugar
- 1 cup water
- 3 oz. strawberry gelatin like Jell-O, packaged
- 3 Tablespoons corn starch
- 1 pint strawberries stems removed and quartered (just under 4 cups of chopped strawberries)
- 9 inch graham cracker pie crust prepared
- Whipped Cream optional, for serving
Instructions
- In a medium sauce pot, add the sugar, water, gelatin, and corn starch. Whisk until the corn starch is dissolved.
- Place over medium heat until the liquid starts to boil and become thick. Remove the pot from the heat.
- Add the strawberries to the liquid. Stir until the strawberries are evenly coated.
- Pour the strawberry mixture into the pie crust. Spread the strawberries out evenly.
- Chill in the refrigerator for at least 3 hours, until the gelatin becomes firm.
- Serve cold with whipped cream.
Notes
- A baked and cooled pastry pie crust can be used instead of a graham cracker crust if preferred.
