Strawberry Pie with Jello
Description
This pie starts with a baked or unbaked pie crust, which forms the base. The filling combines a sugar substitute or sugar, cornstarch, water, and strawberry gelatin mix cooked together until thickened. Once slightly cooled, freshly sliced strawberries are folded in, maintaining their shape and adding freshness.
The mixture is poured into the prepared crust and refrigerated for one to two hours to fully set, creating a firm yet tender consistency. Before serving, the pie is topped with light whipped topping (such as Cool Whip) for creaminess.
The pie offers a balance of sweet, fruity flavors with the soft crust and fluffy topping. It can be customized with gluten-free crusts or dairy-free/vegan alternatives by substituting ingredients accordingly, making it adaptable for various dietary preferences.
Ingredients
- 1 pie crust I used a frozen Pillsbury one, deep dish, of choice
- 1/2 cup sugar substitute or sugar
- 3 Tbsp cornstarch 24g
- 1.5 cup water
- 1 (0.6-oz.) strawberry gelatin mix sugar-free, package
- 2 cups strawberries freshly sliced
- 2 cups whipped topping for topping/serving, light, also known as Cool Whip
Instructions
- If you wish to bake your pie crust, do that first. Cook for 8-10 minutes at 400 degrees F or according to package directions.
- To medium saucepan, add the sweetener, cornstarch, water and jello mix. Cook over medium heat, stirring frequently with a whisk, until thickened.
- Remove from heat.
- Allow the mixture to cool slightly, then stir in the strawberries. Allowing it to cool for 5 minutes or so helps keep the strawberries pretty.
- Pour the mixture into the pie crust and spread out evenly. Refrigerate for 1-2 hours, or until the pie has set before slicing.
- Before serving, top with Cool Whip! You can spread the Cool Whip across the whole top or serve each slice individually with a dollop!
Notes
- Use a gluten-free pie crust to make this pie suitable for gluten-free diets.
- For dairy-free or vegan versions, choose sugar-free vegan gelatin mixes and dairy-free whipped toppings.
- Allow the filling to cool slightly before adding strawberries to keep their texture intact.
- Refrigerate the filled pie at least 1-2 hours to ensure proper setting before slicing and serving.
