Strawberry Pie with Jello

This strawberry pie features fresh hulled strawberries arranged in a baked pie shell and covered with a warm, thickened mixture of water, sugar, cornstarch, and strawberry Jell-O. Chilling sets the topping into a glossy, tender gel that highlights the berries' natural sweetness with a light sweetness and strawberry flavor enhanced by the Jell-O. The pie is best served chilled straight from the refrigerator.

Description

The Strawberry Pie with Jello begins by baking a 9-inch pie shell and allowing it to cool fully to provide a firm but tender base. Fresh strawberries, washed and hulled, are distributed evenly in the crust. The pie filling is prepared by combining water, sugar, and cornstarch in a saucepan and cooking to a boil and thickening for two minutes. Strawberry Jell-O powder is dissolved into the hot mixture, infusing the filling with additional berry flavor and color.

This warm filling is poured slowly over the strawberries, gently coating them. The pie is chilled in the refrigerator until the filling sets into a slightly firm gel that binds the berries and crust, creating an appealing texture contrast. Leftovers should be covered and stored refrigerated, maintaining freshness and structure.

The pie can be prepared ahead and frozen for up to two months, though the filling may become slightly runnier after freezing and thawing due to the water content in the fruit. This dessert offers a fruity and refreshing treat, suitable for casual gatherings and warm weather.
