Description

The filling blends cream cheese, sugar, and Cool Whip until smooth, then is spread evenly over the cooled crust to seal edges and prevent the gelatin layer from seeping in.
Fresh strawberries are sliced and mixed into dissolved strawberry gelatin, which is gently poured onto the cream cheese layer. After refrigerating for at least four hours, the gelatin sets to hold the berries in a sweet, translucent layer, adding a fresh, tangy finish.

Ingredients
- 2 cups pretzel sticks crushed
- ¾ cup butter melted
- 3 tablespoons sugar
- 8 ounces cream cheese softened
- 1 cup sugar
- 8 ounces Cool Whip
- 6 ounces strawberry gelatin unprepared
- 2 cups water boiling
- 3 cups strawberry fresh
Instructions
- Mix the first three ingredients and press in the bottom of a 9 x 13 pan. Bake at 375 degrees for 8 minutes. Let cool completely.
- While the crust is baking, wash and slice fresh strawberries.
- Beat sugar, cream cheese, and Cool Whip in a medium-sized bowl.
- Spread cream cheese filling over pretzel crust. Be sure to cover all edges of the pan to keep the jello from seeping into the pretzel crust.
- Mix Jello and boiling water until dissolved. Add strawberries.
- Carefully spoon and arrange the strawberries first over the the cream cheese cool whip filling. Pour Jello over the strawberries.
- Refrigerate at least 4 hours before serving.
Notes
- Use fresh strawberries rather than frozen to avoid excess liquid preventing the gelatin from setting.
- Double the cream cheese layer if a creamier texture is desired.
- Fresh raspberries and raspberry gelatin may be used instead for a variation.
