Strawberry Rice Krispie Treats Recipe
Description
This recipe enhances traditional Rice Krispie treats by adding freeze-dried strawberries for a natural pink color and strawberry flavor. The process begins by grinding the freeze-dried strawberries into a powder which is then mixed into melted butter and marshmallows heated on the stovetop. A portion of the marshmallows is cut into smaller pieces to add texture in the final mix.
Once smooth and combined, rice cereal is stirred into the strawberry-marshmallow mixture and pressed into a greased baking dish. The treats are cool set and then cut into squares. Pressing a few freeze-dried strawberries on top before cooling adds visible accents and extra flavor. The texture remains similar to classic Rice Krispie treats, chewy and crisp.
This dessert serves well as a sweet, fruity snack or party treat, and adjusting square size can tailor portions. The natural strawberry flavor from freeze-dried fruit provides a distinct but not overpowering taste.
Ingredients
- 1 ½ cups freeze dried strawberries about 3 ounces
- 16 ounces marshmallows
- ½ cup butter salted
- 6 cups rice krispie cereal
Instructions
- Line a 9x9 inch baking dish with parchment paper and lightly grease it with butter. Cut 1 cup of the marshmallows into small pieces - about the size of a mini marshmallow.
- Add the freeze-dried strawberries to a food processor and process until mostly powder. You should have about ½ cup.
- Melt the butter in a large pot over medium-low heat. Add the remaining marshmallows to the pot and turn the heat to low. Melt the marshmallows, stirring the pot occasionally. Remove the pot from the heat, add the rice krispie cereal, powdered freeze-dried strawberries, and the marshmallows you cut into small pieces and stir until combined.
- Transfer to the baking dish and gently press down - buttering your fingers helps prevent them from sticking. If you'd like, press a few freeze-dried strawberries into the top. Let the rice krispie treats cool for at least a half hour and then cut them into squares.
Notes
- Although the pictures show the treats cut into 9 large squares, cutting into 16 smaller squares is more typical and reasonable for serving.
