Strawberry Sauce
Description
The Strawberry Sauce recipe starts by mashing half of the fresh chopped strawberries to release juices and create a smooth base. Sugar and cornstarch are stirred together dry before adding water and mashed berries, which are then brought to a boil while stirring to prevent lumps. The sauce thickens as it cooks for about three minutes, and red food coloring may be added optionally for a vibrant red appearance. After removing from heat, the remaining chopped strawberry pieces are stirred in to add texture and fresh bursts of fruit flavor.
The resulting sauce has a bright, sweet and fruity flavor with a pleasantly thick consistency that can be spooned over desserts or used as a topping. The fresh strawberry pieces maintain a slight chewiness contrary to the smooth cooked sauce.
Store the sauce in an airtight container refrigerated for up to two weeks. It can be reheated gently on the stove or in a microwave, making it convenient for topping ice cream, pancakes, or other dishes requiring fresh fruit flavor. The recipe can be doubled easily for larger quantities.
Ingredients
- 2 cups strawberry cleaned and chopped, fresh
- 1 cup granulated sugar
- 3 Tablespoons cornstarch
- ¾ cup water
- red food coloring optional
Instructions
- Take 1 cup of the chopped strawberries and add them to a small bowl and mash, set aside.
- In a medium saucepan, stir together the sugar and cornstarch. Then stir in water and the mashed strawberries.
- Bring strawberry mixture to a boil, stirring constantly. If you desire a darker red color you can stir in red food coloring at this time.
- Cook and stir the strawberry mixture for 3 minutes or until it has thickened.
- Remove from heat, stir in reserved chopped strawberries. Transfer mixture to a bowl and let cool for 10-15 minutes.
- Add strawberry sauce to a jar or container with lid.
- Serve immediately or store in refrigerator for up to 2 weeks in airtight sealed container

- Add red food coloring before boiling to enhance the sauce's color if desired.
