Strawberry Shortcake Cookies

Strawberry Shortcake Cookies are a no-bake treat made by sandwiching strawberry jam between Nilla wafer cookies, then dipping the assembled cookies in melted white chocolate. The coating sets to a smooth finish, optionally embellished with sprinkles or extra drizzle, resulting in a crisp, sweet cookie with a fruity jam center. These chilled cookies hold their shape well and offer a contrast of textures and flavors.

Description

This recipe layers strawberry jam between two Nilla wafer cookies to create a sweet, fruity filling encased by crisp wafers. The sandwiches are frozen to firm before being dipped in a smooth coating of melted white candy melts blended with shortening for shine and smoothness. After dipping, the coating sets to a firm shell that holds the cookies together while adding creamy sweetness.

Decorative elements such as sprinkles or additional drizzles of melted chocolate can be added while the coating is still tacky. The cookies are best stored in an airtight container at room temperature to preserve their texture, as refrigeration can cause condensation. They make a portable and visually appealing dessert or party treat.

Ingredients

Servings
  • 24 Nilla wafer cookies
  • 1/4 cup strawberry jam
  • 12- ounce white candy melts bag
  • 2 teaspoons shortening
  • Embellishments of your choice
  • strawberries optional

Instructions

  1. Evenly spread strawberry jam on the top side of 12 Nilla wafers. Top with another Nilla wafer. Place in the freezer for at least 4 hours, but up to 24 hours.
  2. In a double boiler, or in the microwave, melt candy melts and shortening. Stir until smooth.
  3. Place one cookie on a fork and dip into white chocolate, covering on all sides and tapping to get excess chocolate off. Remove to a cooling rack with parchment or aluminum foil underneath to catch the drippings.
  4. If adding sprinkles, do so while chocolate is tacky. Otherwise, additional melted chocolate drizzle or frosting can be added after candy melts have set. Allow to set at room temperature. You can place them in the fridge, but when removed, they will sweat.
  5. Do not store in the refrigerator, but in an airtight container in a cool place.
