Strawberry Spoon Cake Recipe
Description
Strawberry Spoon Cake blends melted butter, flour, brown sugar, milk, salt, baking powder, and fresh strawberries to create a soft cake with a moist topping. The strawberries are pressed to release juices and combined with sugar before being poured over the batter in a skillet. The baking process creates a lightly browned cake underneath a juicy strawberry layer.
The cake’s texture balances a tender, buttery base with the sweetness and slight acidity of fresh strawberries on top. Serving warm with vanilla ice cream brings contrasting temperatures and creamy richness to the dish, enhancing the fresh fruit’s flavor.
The cake stores in the refrigerator covered for up to three days and reheats well in a microwave or oven to enjoy leftover slices warm. It’s a good option when fresh strawberries are abundant and pairs well with simple accompaniments due to its straightforward flavor.
Ingredients
- ½ cup butter melted, plus for greasing, unsalted
- 5 ounces strawberry hulled, fresh
- ⅔ cup light brown sugar packed
- 1 cup all-purpose flour
- ½ cup milk at room temperature, whole
- ½ teaspoon salt
- 1 teaspoon baking powder
- vanilla ice cream for serving
Instructions
- Preheat the oven to 350 degrees F and butter an 8-inch skillet or baking dish that is safe to use in the oven. Keep it aside.
- Press the berries with your hands or the back of a fork to extract the juices, then mix ⅓ cup of brown sugar into it. Reserve.
- In a medium-sized bowl, whisk together the flour, melted butter, remaining ⅓ cup of brown sugar, milk, and salt and whisk until smooth. Add the baking powder and whisk gently. Pour the batter into the greased skillet baking dish and spread it evenly in the corners using a rubber spatula.
- Pour the strawberries and all their juice over the top of the cake batter. Bake in the oven for 20 to 25 minutes, or until a toothpick comes out clean in the center. Take it out of the oven and let it cool for 3 to 5 minutes before serving it in bowls. Serve warm with ice cream.
Notes
- Store leftovers tightly wrapped and refrigerated for up to three days to maintain freshness.
- Reheat individual pieces in the microwave for 15-20 seconds or in a 350°F oven for 5-10 minutes before serving.
