Strawberry Syrup

Ingredients

  • 2 cups strawberries
  • 1/3 cup granulated sugar
  • 1/3 cup water
  • 1 tablespoon lemon juice freshly squeezed

Instructions

  1. Measure out the strawberries, sugar, water and lemon juice.
  2. Bring to a boil in a saucepan, and cook on a simmer for 30 minutes.
  3. When the mixture is nice and thick and the strawberries have completely broken down, transfer the mixture to a blender or a food processor.
  4. Blend the strawberry syrup together until smooth. (Be careful during this step because the syrup will be extremely hot!)
  5. Transfer to a mason jar (or another airtight storage container), and chill.
  6. Serve over desserts, yogurt and more.

Notes

  • You can use fresh or frozen strawberries in this recipe. It will be more complicated to get an accurate measurement on frozen strawberries if they're frozen (and the cook time will take longer), so I suggest letting the frozen strawberries defrost in the fridge, then doing the measuring.
