Strawberry Upside Down Cake

Strawberry Upside Down Cake combines fresh chopped strawberries topped with dry strawberry gelatin and miniature marshmallows, over which a white cake batter is poured and baked. After baking and cooling, the cake is inverted to showcase a sweet, colorful strawberry layer beneath a soft, tender white cake.

Description

This upside down cake starts by arranging chopped strawberries in a greased baking dish, then sprinkling dry strawberry jello powder evenly over the fruit to add concentrated flavor and a glossy sweetness. A layer of mini marshmallows follows, which melt during baking to add a soft, sugary texture topping the strawberries.

The prepared white cake batter is poured on top, baking into a soft and moist crumb that contrasts with the caramelized fruit and marshmallow layer revealed by flipping the cake after cooling. The long bake time ensures thorough cooking and integration of flavors.

Once inverted, the cake displays a vibrant strawberry topping, sweetened and slightly gelled by the strawberry jello with pockets of marshmallow softness, making for a visually appealing and flavorful dessert. The cake’s combination of fruit, marshmallows, and classic white cake makes it an interesting twist on traditional upside down cakes, with a sweeter, more playful texture.
