Stuffed Anaheim Peppers
Description
This recipe features Anaheim peppers halved and deseeded, then filled with a sautéed mixture of ground beef, onions, and garlic. The filling is seasoned with a mild chili powder typical of Canadian chili con carne, cumin, salt, and black pepper, mixed with chunky mild salsa for moisture and flavor. The stuffed peppers are topped with cheddar cheese and baked at 400°F until peppers soften and cheese melts, giving a tender texture to the peppers and a savory, slightly tangy, and mildly spiced filling.
The dish serves well as a main or side, complemented by fresh cilantro or parsley and brightened with lime wedges. It suits those who prefer mild but flavorful stuffed peppers and can be adapted with ground turkey or chicken for variation. The texture contrasts between tender peppers and hearty filling provide satisfying mouthfeel.
Notes suggest adjusting chili powder heat level carefully since it varies by region. Using milder powders keeps the dish balanced without overwhelming spiciness. The peppers can be served fresh from the oven, providing a comforting, tender meal.
