Stuffed Cabbage Rolls

Stuffed Cabbage Rolls feature tender cabbage leaves filled with a mixture of ground beef, rice, onion, and green pepper, baked in a tomato-based sauce with a hint of sugar. The cabbage is blanched to soften it, making it pliable for rolling and creating a comforting layered dish. This recipe suits those who enjoy meat and vegetable combinations with a savory, slightly sweet tomato sauce.

Description

Stuffed Cabbage Rolls use large green cabbage leaves filled with a seasoned mixture of ground beef chuck, rice, minced onion, green bell pepper, crackers, and egg, binding the filling together. The leaves are blanched briefly to become tender enough for rolling without tearing. After stuffing and rolling, the rolls are placed in a baking dish and topped with tomato sauce mixed with water and sugar. Baking them for an hour melds the flavors and softens the cabbage further.

The tomato sauce offers a balance of acidity and mild sweetness, complementing the seasoned beef and rice filling. The texture contrasts the soft cabbage leaves with the hearty filling inside.

This dish can be served as a main course alongside mashed potatoes or crusty bread to soak up the sauce. It works well for family dinners or meal prep. Variations suggested in the notes include adding crushed red pepper flakes, oregano, or minced garlic to the sauce for additional depth.

Ingredients

Servings
  • 1 large green cabbage

Cabbage Roll Filling

  • 1 pound ground beef chuck
  • 1/2 cup onion minced
  • 1/2 cup green bell pepper chopped
  • 1/4 cup rice
  • 1/4 cup crackers crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper ground
  • 1 egg

Cabbage Roll Sauce

  • 4 ounces tomato sauce
  • 1/2 cup water
  • 1/2 tablespoon sugar

Instructions

  1. Preheat oven to 350 degrees.

Cabbage Leaf Preparation

  1. Clean the head of a cabbage. Gently pull off about 12 to 15 of the largest leaves of cabbage.
  2. Drop the cabbage leaves into a large pot of boiling salted water.
  3. Cook the cabbage for 3 minutes to blanch it. Blanching it will make it tender and pliable.

Filling Preparation

  1. Combine tomato sauce with water in a small bowl.
  2. In a mixing bowl, combine ground beef, onion, green pepper, rice, crackers, salt, pepper, egg, and 1/4 of the tomato sauce.

Cabbage Rolls Preparation

  1. Spoon the filling mixture into the blanched cabbage leaves, roll the leaves up, and place them in a deep baking pan.
  2. Pour the remaining sauce over the rolls.
  3. Sprinkle sugar on top.
  4. Bake for 1 hour at 350 degrees.

Notes

  • Reheat leftovers the next day to enhance the flavors further.
  • For extra sauce flavor, consider adding crushed red pepper flakes, oregano, or minced garlic to the tomato sauce before baking.
