Stuffed Lotus Roots—Pan-fried Version

Ingredients

  • 1 lotus root skin removed and sliced, stem
  • 1/2 cup pork minced, or shrimp
  • Pinch salt
  • 1 tbsp. egg whisked
  • 1 tsp. soy sauce light
  • black pepper dash
  • oil for pan-frying
  • salt for garnishing
  • black pepper
  • green onion chopped, for garnishing

dip

  • 1 tbsp. Chili oil Chinese red oil
  • 1/8 tsp. sesame seeds toasted
  • 1 tbsp. soy sauce light
  • 1 tsp. sesame oil
  • 1/8 tsp. green onion chopped

Instructions

  1. Cut the lotus root into slices and then soak in clean water.
  2. Marinate minced pork or shrimp with salt, egg, light soy sauce and pepper.
  3. Place around 1 teaspoon filling in the center of one lotus root slice, and the cover with another one.
  4. Brush some oil in a pan and fry all lotus root slices until slightly brown and soft. Turn over to cook the other side too.
  5. Garnish some salt, pepper and green onion and serve with dip.
