Stuffed Onions Recipe

Stuffed Onions Recipe features medium onions hollowed and filled with a savory mixture of Italian sausage, diced apple, sage, celery, and breadcrumbs. The onions soften during baking and meld with the seasoned filling to create a tender, flavorful dish. The combination of aromatic sage and a touch of sweetness from apple balances the savory meat and makes these stuffed onions both hearty and comforting.

Description

This recipe begins by preparing the onions to hold the filling, slicing off the tops and scooping out most of the inner layers, leaving the outer three layers intact to keep shape. The hollowed portions that are removed are partially minced and sautéed with celery as the base for the stuffing. Italian sausage is cooked in the pan with the sautéed vegetables before adding diced apple and dried sage, imparting subtle sweetness and herbal notes.

Breadcrumbs and chicken stock are stirred in to bind the filling, which is then spooned into the prepared onions. The onions are placed upright in a baking dish, a small amount of water added to provide moisture, and the dish is covered with foil to promote gentle steaming during baking. After an initial 30 minutes, the foil is removed for the final 15 minutes to allow the onions to soften thoroughly and the stuffing to develop a browned top.

Stuffed onions serve as a satisfying side dish or a light main course that pairs well with simple grains or leafy greens. The mixture of savory sausage and aromatic spices creates a balanced flavor that highlights the natural sweetness of the baked onions.

Ingredients

Servings
  • 6 medium onion
  • 1 tablespoon olive oil
  • 1 talks celery minced
  • 1 Italian sausage casing removed
  • ½ medium apple peeled, cored, and diced small
  • 1 teaspoon sage crumbled, dried
  • ½ teaspoon salt sea salt
  • ½ cup breadcrumbs coarse
  • ¼ cup chicken stock

Instructions

  1. Preheat your oven to 375 degrees. Slice a ¼-inch thick slice from the top of each onion. Trim the bottom, if needed, so that the onions sit upright. Use a spoon to scoop out all but 3 layers of the onion. Reserve the bits you scoop out.
  2. Mince ½ cup of the reserved onion bits. (Save the rest for a different recipe.) Heat the oil in a large pan over medium heat. Add the onion and celery and saute until they're soft, about 5 minutes.
  3. Add the sausage and break it up as it cooks. When it is no longer pink, add the minced apple, sage, and salt and saute for 2 minutes more.
  4. Remove the pan from the heat and stir in the breadcrumbs and chicken stock.
  5. Divide the sausage stuffing between the hollowed-out onions then place them into a baking dish. Pour ¼ cup of water into the baking dish then cover the top with foil. Bake the onions for 30 minutes then remove the foil and bake for another 15 minutes, or until the onions are soft and the top of the stuffing starts to brown.
