Stuffed Peanut Butter Oatmeal Chocolate Chip Cookies
Description
The cookie dough blends smooth peanut butter, coconut oil (or softened butter), brown and granulated sugars, egg, vanilla, baking soda, salt, flour, and quick cooking oats. Chocolate chips are folded in for added richness. Cookie dough is portioned, flattened, and topped with a Milky Way caramel apple bar before being covered with additional dough, enclosing the candy entirely.
Baking at 350 degrees Fahrenheit for around 9 to 11 minutes produces cookies with light golden-brown edges and a tender center. Cooling before transferring to a rack helps maintain shape. Served warm, these cookies provide a mix of peanut butter nuttiness, soft oatmeal texture, sweet chocolate, and a melted caramel center.
This recipe makes approximately eight large stuffed cookies, ideal to enjoy with a glass of milk. The caramel center adds a distinctive twist to traditional peanut butter oatmeal cookies, balancing chewy oats with creamy chocolate and sticky caramel.
Ingredients
- 1/4 cup peanut butter smooth
- 1/4 cup coconut oil or softened butter
- 6 tablespoons brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1/2 teaspoon vanilla extract or 1/4 teaspoon vanilla bean paste
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup all-purpose flour + 1 tablespoons
- 1 cup oats quick cooking
- 3/4 cup chocolate chips
- 18 nack size caramel apple Milky Way bars unwrapped
Instructions
- Preheat oven to 350 degrees. Line cookie sheet with parchment paper and set aside.
- In a large bowl, cream butters and sugars together. Stir in egg and vanilla bean paste and whip until light in color and fluffy, about 2 minutes. Slowly stir in baking soda, salt, flour and oats until just combined. Stir in chocolate chips by hand.
- Using a cookie scoop, create 8 cookie dough balls on your prepared baking sheet. Press dough down flat.
- Top with a milky way bar and place another scoop of cookie dough over top.
- Press the dough around the snickers bar to cover completely.
- Bake 9-11 minutes or until cookie starts to turn light golden brown on the bottom. Cool 3-5 minutes before removing to a cooling rack. Serve warm with milk! YUM!
