Stuffed Pepper Soup

Ingredients

Servings
  • 1 Tbsp olive oil 15g
  • 1 lb. ground beef I used 92%, lean
  • 1 yellow onion diced, small, 170g
  • 2 bell pepper diced, 300g
  • 3-4 cloves garlic minced
  • salt to taste
  • black pepper to taste
  • 14.5 oz. diced tomato petite, canned
  • 15 oz. tomato sauce I used Muir Glen, canned
  • 16 oz. beef broth 2 cups
  • 1.5 tsp Italian seasoning
  • 1 rice for serving, cooked, 1/3 cup, 145g

Optional:

  • parsley to garnish
  • sour cream or greek yogurt, to top
  • cheese to top, shredded

Instructions

  1. Heat olive oil in a medium-to-large pot or dutch oven over medium heat. Add the ground beef, season with salt and pepper to taste. Cook, breaking into smaller pieces until browned, about 5 minutes.
  2. Add the onion and peppers. Cook for 3-4 minutes to soften. Add the garlic; saute for 30 seconds.
  3. Stir in the tomatoes, tomato sauce, beef broth and Italian seasoning. Taste and add salt and pepper as needed (I added about 1/4 tsp salt and a few cracks black pepper).
  4. Bring to a gentle boil, then reduce heat to a simmer over low heat, cover, and cook for 10-15 minutes.
  5. Dish up in a large bowl, about 2 cups soup with 1/3 cup cooked rice. Serve with toppings of choice and garnish with parsley if desired. Serve hot and enjoy!

Notes

  • Broth: can also use chicken or vegetable broth. For higher protein you can use bone broth
