Stuffed Pork Chops

Stuffed Pork Chops feature boneless pork chops filled with a savory mixture of sun-dried tomatoes, fresh spinach, and shredded mozzarella cheese, seasoned with Italian herbs. The chops are seared for a golden crust and oven-baked to a juicy finish, sealing in the flavorful filling. This preparation creates a balanced combination of tender meat and melty, tangy stuffing.

Description

This recipe uses boneless pork chops sliced to create a pocket, filled with sun-dried tomatoes, fresh spinach, and mozzarella cheese. Toothpicks secure the filling inside the chops to prevent spills during cooking. The exterior is seasoned with Italian seasoning, salt, and black pepper, then seared in olive oil on the stovetop over medium-high heat to develop a golden crust.

The seared chops are transferred to a hot oven to finish cooking until they reach an internal temperature of 145°F, ensuring juicy and safely cooked pork. After resting briefly, they are garnished with chopped parsley for a fresh herbal note.

Served warm, these stuffed chops combine hearty pork with the savory, slightly tangy filling. The blend of sun-dried tomatoes and spinach adds moisture and flavor contrast, while mozzarella offers a creamy texture inside the meat.

Ingredients

Servings
  • 4 pork chops approximately 1-1 1/4 lbs, boneless
  • 1/2 cup sun-dried tomatoes drained, oil packed, halves
  • 1/2 cup spinach fresh leaves
  • 1/2 cup mozzarella cheese shredded
  • 1 teaspoon Italian seasoning
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon parsley chopped

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Slice a deep pocket into each pork chop, but do not cut all the way through.
  3. Divide the sun dried tomatoes evenly between the pockets in the pork chops, then layer in a handful of spinach leaves and 2 tablespoons of cheese.
  4. Use toothpicks to seal each pork chop shut so that the filling will not spill out during the cooking process.
  5. Sprinkle the Italian seasoning, salt and pepper over both sides of each pork chop.
  6. Heat the olive oil in a large pan over medium high heat. Cook the pork chops for 3-4 minutes on each side or until golden brown.
  7. Insert a thermometer into the thickest part of the pork chop. Place the pan of pork chops in the oven.
  8. Bake for 8-10 minutes or until the thermometer registers 145 degrees F.
  9. Remove the pan from the oven and let the pork stand for 3 minutes. Sprinkle with parsley, then serve.
