Sugar Cookie Fruit Pizza
Description
This Sugar Cookie Fruit Pizza starts with a classic sugar cookie dough pressed into a large round pizza pan and baked until lightly browned, resulting in a firm yet tender crust. After cooling, it’s spread with a smooth cream cheese-based frosting that balances sweetness with slight tang from the cream cheese. The topping is an array of carefully washed and dried fresh fruits including berries and kiwi, which add a burst of freshness and a variety of textures ranging from juicy to slightly firm. The combination creates a dessert with contrasting textures — a crisp base, creamy frosting, and juicy fruit.
The assembled fruit pizza should be stored in the refrigerator and is best enjoyed within three days. Note that after the first day, the cookie crust tends to absorb moisture from the fruit and frosting, causing it to soften. It is not recommended for freezing. Overall, this dessert provides a colorful option for special occasions or casual gatherings where a fruit-topped treat is desired.
Proper drying of the fruit before assembly is important to avoid excess moisture that can lead to a soggy crust. Also, allowing the crust to cool completely before frosting ensures the frosting does not melt or become runny.
Ingredients
Sugar Cookie Crust
- 1 cup butter softened, unsalted
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 egg large size
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 2 3/4 cups all-purpose flour
Cream Cheese Frosting
- 8 ounces cream cheese softened
- 1/4 cup butter softened, unsalted
- 1/2 teaspoon vanilla extract
- 2 cups powdered sugar
Fruit Topping
- 1/2 cup strawberry washed and dried well, diced
- 1/2 cup blueberries washed and dried well
- 1/2 cup blackberry washed and dried well
- 1/2 cup raspberry washed and dried well
- 1/4 cup kiwi approximately 1-2 kiwis, chopped
- 8 ounces mandarin orange drained and patted dry with a paper towel
Instructions
Sugar Cookie Crust
- Preheat oven to 350 degrees F.
- While the oven is preheating, grab a large mixing bowl, and a hand mixer, and beat the butter and sugar together for approximately 2 minutes or until it is light and fluffy. Add the vanilla extract and large egg to this mixture and continue to beat this together for another 30 seconds.
- Next, add the salt, baking powder, and flour, and mix until it’s combined into a dough.
- Press the dough onto a 12" round pizza pan until it’s a nice even layer. Bake the sugar cookie dough in the oven for about 14-16 minutes or until the color of the crust is a light brown. Allow for the crust to cool completely before moving on.
Cream Cheese Frosting and Fruit Topping
- While the crust is cooling, grab another large bowl and a hand mixer and combine the cream cheese and butter until smooth. Add powdered sugar and vanilla extract to this mixture and continue to beat it together until fully combined.
- Once the crust has cooled completely, take a small offset spatula and spread the cream cheese frosting on the sugar cookie crust before decorating. Top with the fruit, then refrigerate until it’s ready to be sliced and served.
Notes
- Store the assembled fruit pizza covered in the refrigerator for up to three days; it is best eaten within this time frame to avoid a soggy crust.
- Make sure to dry all fruit thoroughly before placing on the frosting to prevent excess moisture from softening the crust prematurely.
- This dessert does not freeze well due to the delicate cream cheese frosting and fresh fruit.
- Allow the crust to cool completely before applying the frosting to maintain texture and consistency.
