Sugar Free Blueberry Jam is made by simmering fresh or frozen blueberries with water, lemon juice, and optional vanilla until thickened, then thickened further with xanthan gum. This spread captures the natural sweetness and tartness of blueberries without added sugar. It retains some berry texture unless blended smooth, making it a versatile topping for breakfasts and desserts.

Description

This jam recipe uses 2 cups of blueberries combined with water, freshly squeezed lemon juice, and optionally vanilla extract for flavor depth. The mixture is brought to a boil covered, then simmered uncovered for about 15 minutes to reduce and thicken as the berries break down. Some choose to mash the berries slightly or blend the jam for a smoother texture, depending on preference.

At the end of cooking, small amounts of xanthan gum are quickly stirred in to further thicken the jam naturally without sugar. The jam is transferred to a clean jar and stored in the refrigerator, with the yield roughly filling a 200 ml jar.

Sweetness depends on natural blueberry sugar content; notes suggest adjusting with powdered erythritol or stevia glycerite if a sweeter jam is desired. This jam suits those avoiding added sugars but wanting berry flavor as a spread or topping.

  • 2 cups / 300g Blueberry frozen or fresh
  • 2 tablespoon water
  • lemon juice of ½ lemon
  • 2 pinches xanthan gum
  • vanilla extract optional

Instructions

  1. Put the blueberries, water and lemon juice (and vanilla, if using) in a non stick pan, cover and bring to a boil.
  2. Remove the lid and cook on a medium heat for ca 15 minutes, stirring regularly. The mixture will reduce by ⅓ and thicken. Smash the berries with a spoon while they cook.
  3. You can blend the mixture if you wish to have a smooth consistency. I like it the way it is, with a few bits and pieces in it.
  4. At the end, take a couple of pinches xanthan gum and sprinkle it evenly into the pot, stirring well afterwards. Xanthan gum is a brilliant thickening agent and is also used in gluten free baking, so it does come in handy. You only need a tiny amount - it's quite remarkable.
  5. Pour the mixture into a clean jar and store in the fridge. This recipe fills a small (200ml) jar.

Notes

  • Jam yield is approximately 200g; one portion is about 14g (1 tablespoon).
  • Sweetness varies by blueberry ripeness; add erythritol powder or stevia glycerite to increase sweetness if desired.
  • Xanthan gum is used sparingly to thicken without sugar and should be evenly sprinkled while stirring.
