Sugar-Free Coconut Bars
Description
The recipe blends pitted dates with roasted almonds and unsweetened coconut flakes using coconut oil to create a smooth, creamy dough. Pressing the mixture firmly into a lined tray and chilling it for several hours results in bars that hold their shape well with a chewy texture and a balanced nutty and coconut taste. The absence of refined sugars makes these bars suitable for those avoiding added sugar, relying on the natural sweetness of dates.
These bars are convenient for snacks or light energy boosts and can be cut to desired sizes. The method requires just a food processor, minimal hands-on time, and no baking. The ingredients are simple and have a longer shelf life when refrigerated.
Ingredients
- 2 cup dates
- 1 1/2 cup almond roasted
- 2 cup coconut flakes unsweetened
- 2 tbsp coconut oil
Instructions
- Combine everything together in a food processor.
- Blend everything together until the mixture is perfectly smooth and creamy.
- Press the ingredients on a lined tray. I suggest pressing each area to make sure the mixture is firm.
- Let it chill in the refrigerator for at least 3 hours. Cut them into desired sizes.
