Sugar-Free Sweetened Condensed Milk

  • ¾ cup heavy cream
  • ½ cup evaporated milk
  • cup allulose sweetener or xylitol

Instructions

  1. Add all ingredients to a non-stick large (~12") sauce pan or skillet with high sides, and put on medium-high heat.
  2. Get it to slow boil for about 10 minutes, stirring with a wooden spoon or silicone spatula, until it's thickened to coat the back of the spoon.
  3. Let it cool down before transferring to a jar. The sugar-free condensed milk will thicken more as it cools. To prevent formation of skin on top, stir it a few times as it cools, or cover it with waxed paper or cling wrap touching the surface.

Notes

  • Choose the widest pan to accelerate evaporation and get the recipe done faster. In a 30 cm/12" wide skillet it takes about 10 minutes of boiling time.
  • Avoid erythritol based sweeteners for this recipe, as it will make the condensed milk grainy.
  • This homemade condensed milk is slightly less sweet than the store bought version. If you wish, you can increase the amount of sweetener in the recipe (by up to more 30 grams/1 oz), or add in liquid sweetener (like stevia or monk fruit drops) to taste after ready.
  • This LikeHotKeto condensed milk is pourable at room temperature, but it thickens in the refrigerator to lemon curd like consistency. Leave it out of the fridge for some time to make it pourable again, or microwave it for a few seconds and stir.
