Instructions
- Cut the tomatoes in half if they are larger than bite sized.
- Add the 1 Tbs Balsamic, 2 Tbs Olive Oil, Basil leaves, 1 teaspoon sugar, ½ teaspoon black pepper and ½ teaspoon kosher salt. Mix gently, but well.
- Refrigerate for at least an hour to allow flavors to meld. It's good right away too though! Taste before serving, you may need to add more salt and pepper.
Notes
- Any tomato works, just cut into bite sized pieces..
- Cutting the cherry tomatoes in half helps with the tough skin.
- There are many ways to change up this recipe. See a full list above!
- Other herbs added to this salad are fantastic, like oregano!
- It IS important to add the sugar and salt. That gives you a nice balance of flavor that you won’t want to miss.
- You can try other vinegars, personally, I like the taste of Balsamic with tomatoes. Rice Wine Vinegar would be nice, but very tart, so maybe just try half the amount to start.
- Apple Cider vinegar would work too - again start with half and increase to your taste.
- Balsamic vinegar does give a brown tint to the salad.
- For added zip, add some small dice onions.
- A few dices of cucumber would work too.
- PRO TIP: By using different colors of tomatoes, you will really add a lot of appeal to this simple tomato salad.
- PRO TIP: To cut the basil in a chiffonade, roll the basil leaves up together and cut into small strips. This helps release all the best flavors of the basil.
