Description
Summer Tiramisu assembles layers of dried ladyfinger biscuits cut into pieces and soaked briefly in a mixture of strong cold coffee and Kahlúa liqueur. The creamy component is a blend of softly whipped heavy cream and mascarpone cheese folded together without overbeating, maintaining a light and airy texture.
The dessert is built in multiple layers in serving glasses: soaked biscuit pieces alternate with spoonfuls of the mascarpone cream, creating a moist yet structured treat. A generous amount of freshly shaved dark chocolate tops the final cream layer, adding a slightly bitter contrast and a delicate texture.
Prepared a few hours before serving allows the flavors to meld and the soft mousse-like texture to develop. It can be made without alcohol by omitting the Kahlúa, relying on coffee for flavor. Smaller servings can be prepared due to the richness of the dessert, which is best enjoyed chilled.
Ingredients
- 12 ladyfinger cookies dried; aka savoiardi biscuits
- 1 cup heavy cream cold
- 1/3 cup powdered sugar
- 1 cup mascarpone cheese at room temperature
- 1 cup coffee strong, cold
- 6 tsp Kahlúa or other spirit of your choice
- 1-2 ounces dark chocolate for grating
Instructions
- You'll need 4 glasses for serving, I used classic lowball glasses.
- Whip the cream with the sugar until it forms soft peaks, then gently fold in the room temperature mascarpone until they are both combined. Don't beat, just fold gently.
- Mix the cold coffee and Kahlua together in a shallow bowl.
- Working one ladyfinger at a time, cut each biscuit into one inch pieces, and dip them into the coffee to saturate. Put the pieces at the bottom of one glass. Repeat with all the glasses.
- Top each layer of soaked biscuits with a spoonful of the mascarpone/cream mixture. Top with a second layer of dipped cookies. Top with more cream, then a last layer of soaked cookies and a final topping of cream. Finish off with a generous amount of shaved chocolate. Note: if you love chocolate, feel free to add chocolate shavings to each layer.
Notes
- Use room-temperature mascarpone for smooth folding with whipped cream.
- Fold cream and mascarpone gently to retain a light texture; do not overbeat.
- Prepare at least a few hours in advance to allow flavors to meld and texture to set.
- Omit alcohol if preferred; coffee provides sufficient flavor.
- You can substitute homemade ladyfingers for the store-bought variety.
- The rich dessert can be portioned into smaller servings if desired.
