Sun Dried Tomato Pasta

Easy homemade sun dried tomato pasta with spaghetti, olive oil, garlic and loads of sun dried tomatoes. This pasta is so delicious and takes only 15 minutes to make!

Ingredients
- 8 oz (225g) spaghetti
- 1 tablespoon extra virgin olive oil preferred or olive oil
- 1 tablespoon tomato oil sun dried
- 3 cloves garlic minced
- 1/2 cup tomatoes cut into pieces, sun dried
- 1/3 cup chicken broth
- salt to taste
- 3 ground black pepper dashes
- chives for garnishing, optional, or chopped Italian parsley
- Parmesan Cheese shaved
Instructions
- Cook the spaghetti in salted water according to the package instructions until al dente. Drain and set aside.
- Heat a skillet and add the olive oil along with the sun-dried tomato oil. Sauté the garlic until aromatic, then add the sun-dried tomatoes. Stir for a few moments before adding the cooked spaghetti.
- Add the chicken broth, along with salt and pepper. Stir well to combine.
- Dish out the pasta and garnish with chopped chives or Italian parsley. Shave some Parmesan cheese on top before serving.
