  • 1 pound chicken breast cut into 1 inch pieces, boneless skinless
  • 1 tablespoon olive oil
  • salt to taste
  • black pepper to taste
  • 2 cloves garlic minced
  • 2 teaspoons flour
  • 1/4 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan Cheese
  • 1/4 cup sun dried tomatoes drained, oil packed
  • 2 cups spinach fresh leaves

Instructions

  1. Bring a large pot of salted water to a boil; prepare pasta according to package directions.
  2. In a large pan, heat the olive oil over medium high heat. Add the chicken and season with salt and pepper to taste.
  3. Cook the chicken for 4-5 minutes, stirring occasionally, until browned and just cooked through.Add the garlic and cook for 30 seconds.
  4. Add the flour to the pan and stir to coat the chicken. Cook for 30 seconds.
  5. Add the broth to the pan and bring to a simmer. Add the heavy cream and cook until just thickened, 2-3 minutes.
  6. Stir in the parmesan cheese, sun dried tomatoes and spinach and season with salt and pepper to taste.
  7. Drain the pasta and pour it into the pan with the chicken mixture. Stir to coat the pasta in the sauce and serve immediately.
